Paris can only be defeated in the first round, not in NG+. If you lose, you have to start the game again.

Can be done in easiest difficulty. Its a chore but not a big deal

This is by far the hardest achievement in the game, though in reality it will just take some extreme patience to accomplish. During the prologue of the game, the final battle will be a fight against Paris. He has a ridiculously huge health pool and does tons of damage with his arrows and his sword strikes. The fight seems to be unwinnable, especially if you're just starting the game for the first time. However, you can actually kill him! Personally, I just kept my distance and continually dodged his arrow shots, and responded with a shield throw of my own every time the cooldown was available. This took me nearly 15 minutes to do, but it was safe and I only had to use two health potions after missing some dodges and getting set on fire once. If you try to get up close, you'll generally take a sword hit or two and have to burn through your health potions too quickly. Slow and steady is the play here.
If you die during this fight, you'll continue on with the story, so this is technically a "missable" achievement, but since it's within the first ten minutes of the game you'll just want to start another playthrough on Warrior difficulty and try again. If you're out of health potions and don't think you'll win, I believe you could dashboard out of the game and there should be a save directly before the fight. Either way it's so early in the game it's not much trouble to get back to the fight for each attempt.
