After the final boss, you will be given the choice to immediately jump into NG+ or continue exploring. If you have any other achievements or collectibles you want to do before starting a fresh playthrough, make that choice. Whenever you want to venture into NG+ after that, simply visit any shrine and choose the option from the menu. Take note of the info in the Road Map to minimize the time you need to spend on this playthrough.
