How to unlock the Mushroom Navigator achievement in Avatar: Frontiers of Pandora - Definitive Guide
As you uncover parts of the Clouded Forest map, you will notice that icons appear called “Budding Watcher” - this is the Mycelium Network which are essentially giant mushrooms. There are 9 in the Clouded Forest region in total.
When you find one, you need to follow the 4 trails of small mushrooms leading away from it. They each lead to a medium sized mushroom that you need to interact with. Once you have touched all 4, return to the Budding Watcher and it will have opened at its base. You must pick up its gift for the achievement to track. All gifts are food items giving some huge perks - such as immunity, silence, camouflage and some others.
There are 9 in total on the map but you need 10 for the achievement. Once you clock over the day in real time, they reset and you can collect them again. Personally, I just located 3/4 because the game is long enough for you to still be playing a few days down the line, if not longer. I assume they reset so you can collect and use the perks more often.
To get you started, the 3 main ones I used were:
Stone Cloud Valley - immediately north of The Hollows (415m).
Crimson Great Wood - north east of Gas Collector Alpha (451m).
Cradling Pines - east of Sheltering Pines (610m).

I was at 8/10, with full food inventory and opened my last 2. I did not take the food. There was no achievement and the tracker hadn't moved. Dropping some rations and grabbing the food inside the mushroom fixed it for me.
Update: it shows up as completed here now after writing for a bit more
While most activities in Avatar: Frontiers of Pandora are one-and-done activities, there's one that you can repeat constantly if you wish - once it's had time to refresh, of course.
Those such activities can be found at Budding Watchers, which when completed, count as “Mycelium Network activities.”
To complete a Budding Watcher, you'll need to follow 4 mushroom trails from the large mushroom stack itself. Once you've followed them and interacted with the medium-sized mushrooms at the end of each trail, you'll be able to return to the giant mushroom stack and grab a reward, which usually comes in the form of a rare potion.
There are 9 dotted around the Clouded Forest to complete - yes, you'll have to complete at least one twice - and once you've finished your tenth Budding Watcher, the ‘Mushroom Navigator’ trophy will unlock. One note: make sure to grab the potion from the basket at the end - underneath the large mushroom - otherwise the task won't be considered complete.

1. Activate each mycelium. To do this, from each we go along 4 paths of mushrooms (at night it is more convenient - they are illuminated by haze) and for each mycelium we activate large mushrooms 4 times. After this, the myceliums open and you can pick up food.
2. After activating 9 myceliums, we wait a day (24 hours of real time, not game time!) and re-interact with any of the previously completed ones.
