How to unlock the Heart of the Labyrinth achievement in Before We Leave - Definitive Guide
In order to tame a minotaur, you need a fully upgraded training ground.
You can find a minotaur by exploring ancient ruins. Ancient ruins can be found on the planets you colonize, but not your starting planet. The ruins do not always spawn a minotaur when explored. They can sometimes give you a technology or background lore. Minotaurs are mechanical beings that will appear in your settled areas and scare your peeps into hiding. While the minotaur is around, peeps won't travel or work. It does not kill peeps, only scares them. It will then travel off into the wilderness thus allowing peeps to return to their activities. It repeats this pattern until finally tamed.
The option to research Training Ground in the tech tree appears once you discover a minotaur. To fully upgrade your training ground, you must also research Cooking, Baking, and Farming. Once researched, the training ground is found under the whale icon in the build menu.
To build a training ground you need potatoes, water, wood, and tools.
First upgrade: tea and vegetables.
Second upgrade: bread and milk.
Third upgrade: meals and smoothies (not upgraded "good" versions)
Forth and final upgrade: good meals and good smoothies
After this final training ground upgrade, your peep wrestler must fight the minotaur another 6 to 10 times in order to tame the minotaur. Once this occurs, the achievement pops and you get a message saying it has become an ally and it begins to gather resources for you.

Nice guide, but this is not accurate:
If you have upgraded versions of these buildings, you will have to build the basic buildings again
You can change the recipe to make the basic goods, when you have the upgraded buildings. That way you don’t have to destroy or build a second basic building.

Thanks. I'll edit that. They must have changed that with an update as I don't remember that being a choice when I played this.
