Buy a car at the auction house, take it fully apart, fix and assemble. No need to add liquids, no need to do the headlight adjustment or the wheels alignment. Once all 4 areas are at 100%, you are good to go.
Now make a manual save and note the time of the save for reference. Click on sell car, before confirming make sure to have 1 finger on the A button, your other hand on the power cord of the Xbox. To make it easier you can use a power cable extension with an on/off switch, then you cant slip. This is way more reliable than dashboarding and quitting and works without a hassle.
Sell the car, screen goes black, you hear the ca-ching of the cash and THEN IMMEDIATELY cut the power. Switch it back, boot the Xbox, get back to the game. I have tested on a Series X, this game doesnt support Quick resume, so you have to quickly reload the game. You will notice, that the achievement did not progress - DO NOT WORRY. Once back in the game, you will see that the time of the save is the one you noted, so it didnt save the car sell. Your car will be there, ready to be sold again.
If you want to test if the method works for you, sell the car now, you will see that the achievement progressed 4%, not 2%. Then you can repeat the same process several times (I have tried 5 times power cut before finally selling, progressing 10%), depending on your level of confidence.
Now all we need is to get to level 50, as despite fully renovating 20+ cars, I am still stuck at level 36. But at least I can do it in an enjoyable way through fixing cars, instead of full assemblies.

There is no way to track if the car will count for the achievement or not and there is no savegame to be reloaded, so pay attention to the following checklist, to make sure everything has been taken care of, otherwise you will waste 60-90 minutes per car.
1. Fix and install all body parts, including licence plates. Use the welder.
2. Buy all new interior parts, seats and steering wheel.
3. Fix and install all car parts. Check all the pages in the list in the car status if everything is 100%
4. Go to the car washer and do both exterior and interior. I believe regular wash is not needed, but wont hurt. Interior is a must!

6. Check on the car status screen in the bottom right if all 4 areas are 100%. This is still not a guarantee for the achievement tracker to move, I had 100% without doing wheel alignment and it didnt count.

Stuck at 4% the last 3 cars I sold did nothing. Annoying asf

Lets keep each other up to date. I have tried 2 more things:
1.) Last 3 cars bought at auction didnt work, so went for a Barn - it counted
2.) Noticed that many other achievements also didnt progress (like the 10,000 screws), mostly after I left the game and jumped back in with quick resume. So for the car in #1 I quitted the game, restarted and went from Barn to completion in one go - it counted.
Now I will try an auction car in one go, to see which of the two above was the trigger.
Its a lot faster to do auction.
1.) Last 3 cars bought at auction didnt work, so went for a Barn - it counted

JUST FOUND A MASSIVE TIME SAVER AND IF DONE PERFECTLY EACH TIME YOU WILL ONLY HAVE TO BUILD ONE CAR
The goal is to beat the autosave feature that occurs every time you sell a car so quick reactions is everything here as to not lose your newly built car to it.
-Build any car you want up to 100% on all 4 bars.
(Theres no need to do wheel or headlight alignment nor fill up oil etc.)
-Perform a manual save so we can return to this point.
READ THE NEXT POINT FULLY BEFORE SELLING!!! You have been warned…. May as well check your tracker to see what percentage you are on so you can verify its working after.
-The moment after you press ‘A’ to sell IMMEDIATELY open the guide menu and quit out of CMS21.
If done correctly when you reload your profile your car will be still there and checking your progress it should of moved 2% as well.
I have jumped from 62% to 72% in 5mins
EDIT: Just completed 38% (19 fully built cars) in 5 hours (messed up a few times) I will try to get a recording of what I did, but feel free to message me if you want need any help

Ah cool! We can save scum. So to get it faster, do 2 cars, near completion. Save the game and Quit out. Re-open the game, sell the 2 cars, go to Manage Game in the guide, Then Delete the LOCAL SAVE ONLY. This will kill the game without saving a save.

Didnt work for me. Cant imagine I could possibly do it any faster. Are you doing it on an old xbox? maybe series x proccesses too fast?

This guide only works on Xbox Series X|S.
Do NOT do this until you have the "Car flipper" & "Great roll" achievements or they won't unlock until you reset your progress.
Open the Xbox Accessories app and create a new profile, map "Share button, press" to Launch App and select any game that opens fast and can't be quick resumed.
Once you have fully renovated a car, get the final sell screen up, press the share button and A immediately after. (You'll know you're doing it right if the first menu disappears but the second menu behind it stays and your game opens before the screen goes black.) Once your game opens, remove Car Mechanic Simulator 2021 from your quick resume and close the game you opened and repeat. (It's also important you do not go over the required 50 cars or the achievement will not unlock and you'll have to restart.)
The tracker will go up 2% each time you do this but won't actually show on the tracker until you finally sell it.

Although the tracker doesn't update you can check your progress from the main menu by going to the 'extras' section and looking for 'sold fixed cars' The achievement will unlock once this hits 50
