on the "moon" level there are two UFOs on the map, kind of high.
One is near the rocket platform and the other is almost in the middle of the big crater (where the falcon millenium is)
Basically you have to touch it after a jump, handling with your car boost. It will take a couple of tries to do it the right way since there is no ramp to go straight to it.
I personally think that the crater one is easier to touch it, since around it there is plenty of room to gain speed and reach it, unless with the near the rocket one
