This achievement is obtained through playing the story so is unmissable. To get this this achievement you have to:
Complete the quest
This quest involves a boss fight against
The boss is quick when attacking so be prepared to be dodging/blocking during the fight. At several points during the fight, the boss will go to one of four different corpses and begin regening health. Follow him as he runs away and, as he begins feasting, either shoot at him or throw a weapon, which will stop him from regening health. Make sure you do this otherwise the fight can go on for much longer. Other zombies also spawn in so be aware of your surroundings.
After finishing the fight and completing the mission, the achievement should pop! Hope this helps :)

Is this the only butcher?

No, after you defeat him butchers start appearing as normal Apex enemies.
It’s worth noting you actually have to go back to the Sterling Hotel and hand in the laptop before this pops. Completing the boss battle isn’t the trigger.
