How to unlock the Can't Touch This achievement in Dodgeball Academia - Definitive Guide
Dodging Challenges are accessible on Day 3 in the upstairs far left classroom of the school, it is part of the main mission. I am unsure if it is accessible on other days. After trying once on easy mode, you will battle the computer head guys in a conventional match. After that, return to Kat, the teacher with long blue hair, to try the dodging challenge again and work through easy, medium, and hard.
Go to Options-->Accessibility Options and set damage received to 0%. This will make each hit you take only subract 1 HP.
Then, add an Agility and Max HP Equipment. Mix and match as needed (ie 2 agility equipment).
Comment from Calex dEUS: "Just an FYI for those following the walkthrough as I can't add it there, in the guide the just before doing this the author tells you to equip the embarrassing and stinky underwear. Doing this will make you fail on the first hit no matter if you have the damage set to 0 or not in options. Just unequip them before doing these."
Enemies will gradually increase along the sidelines. I generally ran in a large circle with a little buffer between me and the edge and tried jumping as well to dodge balls. Eventually you will get stun-locked by the volume of balls hitting you and lose. Sometimes you can escape this barrage and jump around for a few more seconds.
I think getting an S-rank requires surviving for a minute in each round. You must S-rank in easy, medium, and hard.

I had lost between 80-100 health at the 1 minute mark on my three runs without moving at all, so you can use this method to just tank through to S-rank.

The dodging challenges unlock as part of the story in Day 3 and you'll do the Easy challenge to move on. This challenge has you moving around only (no catching or countering), avoiding balls thrown at you from outside the court. Normally, it would be quite difficult but luckily the challenge only ends when you take damage and if you have the Accessibility slider set to 0% damage the challenge will technically never end. Instead, wait about 90 seconds getting hit in the face, then pause and move the slider up so getting hit does hurt you, ending the challenge and awarding an S-rank. Repeat for Medium and Hard to unlock the achievement.
