How to unlock the Winning In Style achievement in MLB The Show 21 - Definitive Guide
Game Mode: Exhibition
Team: Home
Innings: 3
Team: Dodgers
Simply load up a game & choose the home team, which will be on the right side. I tried this with the away team and did not get credit, as it was the top of the inning, and the away team bats first.
When in-game, pause. You can choose to turn up "Human" batting sliders to the right such as contact, power, etc. Make certain that both teams are tied (0-0 for instance).
Wait for your turn to bat in the bottom of the 3rd OR extra innings, which should be the bottom of the fourth. Simply get a hit that advances the runner to home or a home run to score a "Walk-Off" as the title suggests.
This can also be obtained naturally through RTTS simulations if you don’t want to prioritize this singularly. Please note that some users have been reporting that this achievement doesn't work in March to October, so it's best to avoid it.
Alternatively, you can follow the steps with a friend or boosting partner in an online game (without sliders). Feel free to respond in the comments if anything is unclear or this can be improved.
Edit - Thanks to @Mastergerwe for pointing out that it can be gotten in the bottom of the 3rd. I don't really know why I missed that. Also thanks to @derektwopointoh for clarification on the home team. @MrWhite2U & @MH The Rockstar cited RTTS mode.

Bro, I’m pretty sure you can get it in the bottom of the 3rd inning as well if you are the home team. You have to be the home team for it to work. Because home team bats last, and that’s how a walk off works.

Home team is actually on the right in the team select menu.

Hello there, ladies and gents. Today we are looking at the "Winning in Style" Achievement. I have a video below that combines this achievement with the "Mowing Them Down" achievement, as you can do both in a 3 inning game. I will explain, in text, how to get the Winning in Style achievement alone.
A walk-off victory happens when the Home Team wins in their last at-bat. What this means is that if the teams are playing a 3-inning game, if the Home Team goes ahead at any point in the 3rd inning or in extra innings, it is considered a walk-off victory. This does not work as the away team, as that is considered a last at-bat victory.
First, head to Settings - Settings - Gameplay and make sure your Hitting/Baserunning and Pitching difficulties are Beginner level, and go to the general tab and make sure you are playing on Casual Gameplay Style. Press B a few times to back out and A to Apply Settings if they changed.
Now go to Settings - Sliders, and follow these:
Dynamic Difficulty - All the way LEFT
Human Foul Frequence - All the way LEFT
EVERYTHING else Human - ALl the way RIGHT
CPU Foul Frequency - All the way RIGHT
EVERYTHING else CPU - All the way LEFT
Fastball/Offspeed pitch speed - matter of preference. I prefer them all the way up, but for achievement purposes you probably want them all the way LEFT
All Errors - default
EVERYTHING below - all the way LEFT
These can also be used for the Mowing them Down achievement.
Go to Exhibition mode, select the team on the left, and find the San Francisco Giants. Now hit LB to make them the Flying Squirrels. Return to the team on the right, and I recommend being the LA Dodgers as they have the best roster top-to-bottom. Uniform and stadium don't matter, but make sure the Fast Play presentation mode is active, and make sure the Extra Innings Runner is turned on.
Once you get into the game, your goal is to get through the first 2 and a half innings without either team scoring. For pitching, use your Starting Pitcher and follow the pitch selection and location it recommends. You may unlock the Mowing them Down achievement just by accident, though I will expand on that achievement in its own solution.
For hitting in the first 2 innings, just hold down the Y button. You will consistently bunt and get yourself thrown out. You can also tap the LB when the baserunner approaches first in case you are safe, to make them run to second base and get tagged there. Just make sure you don't score any runs. You can also just sit and take pitches until you strike out, although it will take a little longer.
Once you reach the bottom of the 3rd inning, its time to hit the baseball. Do whatever you need to to score a run. You are one of the best teams in baseball with sliders in your favor, against one of the worst teams in the game, so it should be relatively easy. If you don't score, you head to extra innings. There will now be a runner on 2nd to start the inning, so pitch carefully and get through the top of the inning without giving up a run, and then it will make it much easier to score the run from second. You can sacrifice bunt them to 3rd and get them in on a flyout, its up to you. This happens in every extra inning until the game ends, so just keep at it. As long as you win the game, you will unlock the "Winning in Style" achievement.

For those who don’t know what a walk off is in baseball, it’s when your team wins the game in the bottom of the 9th inning, or extras if the game is tied. For those who are still confused, here is a link:

KEEP IN MIND, THIS CANNOT BE SIMULATED. You need to play the full game to get it to pop. This does not work in March To October, or Road To The Show because both games are simulated.
