First, you must be at least Level 10. You need to put 11 skill points in to the Mastermind Tree. You need to unlock the Dominator skill which allows you to order non-special guards to surrender and handcuff themselves. [**Defrosted Jay points out that if you ACE the Dominator skill, you can order the guards to cuff themselves from the roof, instead of having to wander around inside the building.]
There are always 4 wandering guards plus the guy at the desk that you need to take out (plus cameras of course). The wandering guards can overlap, so be careful and patient. The guy at the desk is special, and therefore *** to order him down you must have the Dominator skill ACED. If you do not have it ACED, you can sneak up on him and melee him and answer the radio. [thanks for clarifying he can be ordered down - King fiShiZ] BE CAREFUL while walking around, there is a random laser doorway that will trip the alarm, do not pass through it.
**It seems 99% of the time you can only make 4 guards cuff themselves. Therefore, you almost certainly have to melee one of them!
Once all 5 guards are neutralized, take out the cameras. There is one camera in each gallery and sometimes one in the lobby/hall area.
Once the guards and cameras are down, you have free reign of the place (don't forget about the laser doorway though).
Now it is time to get the paintings. Beware! Video says 7 paintings, it randomly varies from 6 to 9 so double check everything to make sure you have them all. Pick the front door lock and waltz out with the paintings.
*NOTES
#1 - The lowest difficulty is 4 white dots, but difficulty doesn't really matter if you're stealthing, just make sure you don't pick a pro job, that way if you fail you can restart.
#2 - This seems to only unlock for the host, so you probably want to do this solo. My friend was in game with me the whole time and he did not get it.
#3 - There is NO need to go in the security room, just leave it (and the guy inside of it) alone!

The basic strategy I used both times I did it was to pick the lock on the bathroom door and make my way through the building. When you encounter a guard use the domination skill to make them handcuff themselves (Be sure to do this where the Cameras can't see you). There are about 5 guard patrolling and one at the front desk, once all the guards are taken care of destroy all the cameras using melee and you are free to clean the place out.
I ran this solo and in co-op and can confirm it is not host only who gets the achievement. Also the achievement description is a bit misleading, you can be seen as long as no alarms are raised or loud shots fired.
I hope this helps out, once I found out you could use dominate I was able to net this achievement in one go.

Go in through the side door, underneath the spiral stairs, and explore your surroundings. If you find cameras, don't panic. Move underneath them, stand up while looking up, and punch them out. Once you've done this, guards might come to check it out, so make sure they don't have a chance to call in a broken camera.
Watch out for trip beams between some of the gallery halls. They seem to be random but on all the time. I had no access to the security room and so didn't risk trying to see if they could be turned off.

Note: This achievement only unlocks for the host. The spawn for the paintings, guards, cameras, security room, and roof windows is random every time you play the mission. However, there will always be one guard stationary behind a desk in the lobby, four guards that are roaming, and one guard in the security room watching the cameras. There will also always be a motion detecting laser barrier between 2 of the rooms, it will vary between which two rooms.
The only "mandatory" skill for this is Dominator (aced is best) under the Mastermind tree. There are a few other skills that can be very helpful. The Inside Man (aced) perk will unlock the keycard asset needed to get into the Security Room. Highly upgraded ECM jammers will allow you to simply override the door. Without them, you'll be left putting a drill on the door or breaking all of the cameras after clearing out all four roaming guards and the stationary guard at the desk in the lobby. Fast Hands and Transporter are also useful.
Taking the cameras out early will make it easier to intimidate the roaming guards without getting caught. However, if a guard sees a broken camera, they will immediately freak out and call it in blowing the achievement.
This can be done solo in Crime.net Offline or with teammates. Either way, the strategy is basically the same. You can only dominate four guards; any additional guards will have to be killed, and you will have to be sure to answer their pagers.
There are multiple points of possible entry. You can enter through the bathroom on the right next to the spiral staircase. Advantage: You can lure patrolling guards into the bathroom by triggering the hand dryers, just crouch and walk underneath them to turn them on. Guards in the hall right outside will come in and you can dominate or kill them in private out the view of other guards or cameras. You can also go up the stairs to the roof and drop down inside one of the rooms. If you go up onto the roof, be careful you don't get spotted through the glass ceilings. If your Dominator skill is aced you can subdue enemies through the glass ceilings. However, this can be a little touchy and is not 100% guaranteed to work every time.
Once you've got all the guards and cameras taken care of, all you need to do is find all the paintings and get them to the vehicle. Again, be careful you don't break the laser barrier when you're running through looking for paintings. The achievement will unlock as soon as you escape.

The art gallery has three different entry points- the main entrance, a bathroom entrance on the right, and various skylights above the building. I personally used the bathroom entrance.
There will always be one guard at the front desk, he will glance back and forth- but will not move from this position. There will be four other guards roaming around the gallery- for a total of five. You can only answer 4 pagers successfully, so you need to intimidate (R2) the final guard and have him cuff himself. The guards roaming the gallery spawn in differently each game, so there really is no way to create a step-by-step guide for this trophy. However, some helpful tips are:
1. Bag the guards and throw them in a bathroom stall (front right of the building)
2. Never kill guards in doorways, wait until they have moved around a corner
3. Always kill the first four guards, the intimidated guard will be an easy alert if there are other enemies.
4. Don't shoot the cameras before you kill the guards unless you absolutely need to. While it's better to shoot the camera than to be detected, I failed this mission numerous times because the final guard saw a broken camera before I could deal with him.
After you've taken out the five guards, either melee or shoot the 4-5 cameras in the gallery. Once those are taken care of, bag the paintings with the red tag (there are a maximum of 9 of them, and some people have reported as few as six spawning in) and take them to the vehicle. With a little luck, you'll have nine paintings- which will net you the "Big Deal" trophy during the Day 2 mission.

This is one of the few stealth-based trophies in the game. Anywhere between 6-9 paintings will spawn when you start. You can do this in solo or co-op, it is really up to you. If you decide to do it in co-op, turn off AI so that they don't revive you. The main benefit of doing it in co-op is buying the Camera Feed asset, which will allow a second player to spot guards for you. Make sure to wear Two-Piece Suit to avoid being discovered, as well as bring a silenced weapon.
There are 5 guards and 5 cameras throughout the museum, as well as a 6th guard in the security room. Ideally, you'll want to kill 4 of the guards before answering their pagers and bagging their bodies, then dominate the last guard so that he cuffs himself. Once you do that, you can go around and melee the 5 cameras. This way you won't have to bother with the guard in the security room. With all 5 guards and cameras taken care of, you're free to secure the paintings and escape. Don't rush yourself with disposing of the guards, always make sure you're in a position where there's no camera and no incoming guard before you kill one. You can dominate a guard in the bathroom if one walks in there, as chances are he won't be spotted at all. Try and melee the guards instead of using your gun, as you may accidentally hit a window or something else that can alert the guards. Also, as you're walking around, one of the doorways will have a laser grid across it - make sure you don't step into it, otherwise you'll set off the alarm!
Recommended skills for doing this are: Smooth Talker (Mastermind Tier 1), Dominator Pro (Mastermind Tier 2), Chameleon (Ghost Tier 2), Cleaner Ace (Ghost Tier 2), Shinobi Ace (Ghost Tier 3), Martial Arts (Ghost Tier 3).
The below video is from before Patch 1.02, so ignore the fact that he dominates the guards. On Patch 1.02, cuffed guards can be detected by other guards and cameras, thus it is not recommended at all, except for the fifth guard. You can only answer 4 pagers across your entire team with the Smooth Talker skill, so the fifth guard will have to be cuffed. Kill, answer pagers and bag enemies until you can't answer any more pagers.
