How to unlock the Grand Thievery achievement in Persona 5 Tactica - Definitive Guide
This achievement requires you to earn all stars from all non-boss missions as a result of meeting bonus conditions on top of the mandatory conditions for winning a mission and progressing in the main story. Each mission offers three stars, and you can find the requirements needed to earn each star from the Start Battle menu by pressing . You can also check from the list of completed missions by going to the Hideout menu > Replay option to look for any missing stars (unlit in yellow) and then pressing to bring out the requirements to earn them.
Important to note that you DO NOT NEED to meet the requirements to earn all three stars on the same mission. You can prioritize on getting one or two stars that's easy and come back when you have a better optimized loadout of your party members and their associated Personas and abilities to earn the rest, as well as more expanded skill trees as a result from earning bonus GP for completing Quests.

So, if one star is for getting somewhere in 8 turns and missed it, but got the other two, can I replay focusing only on that?

That's how it works. As an example from my experience, the penultimate mission before the boss with Lady Marie I got 2 out of the 3 bonus stars, with the one missing because I didn't clear out all the enemies (I was prioritizing just passing the mission [Escape with the whole party] to stay on track with the main story). But upon replaying the mission and getting rid of those enemies to earn that star, I didn't lose earned status on the other two. Just emphasize playing through the main story with this intel, knowing you can always come back later to earn all the stars. 😎

Awards in Persona 5 Tactica are optional end of mission criteria that you can accomplish for better rewards from a mission. These will include things like, finishing the mission with no characters being knocked out, or finishing it within a certain amount of turns.
You’ll be able to see what Awards you need to achieve per level in the Pre-Battle screen (where you choose your party, change your Personas and visit the Velvet Room), just hit the button.
In order to get the ‘Grand Thievery’ trophy in Persona 5 Tactica, you’ll need to get 3-stars on all non-boss missions - there are 51 missions in total before the final boss, but you’ll only need to do 44 for the ‘Grand Thievery’ trophy, as the other missions are boss missions and cannot be replayed.
Fear not though, this isn’t a one-shot attempt and you’re done trophy. Thankfully, a short way into the game you’ll unlock the Replay function, which you can access when in Leblanc’s, which allows you to retry missions you’ve already attempted. You can access this by going to Hideout, and then going to Replay in the hideout menu.
These can be replayed whenever, and in whatever order you want. You can even go back to Kingdoms after you’ve moved on, and can take in better weapons and Personas that you would have had access to at that time too.
