This is pretty easy to achieve and can only be done in regular stages. Just select Bridge Island Zone Act 1 because it is the easiest stage to clear. Just collect 200 rings. You do not have to fight a boss like in other stages in order get this achievement.
As long as you play carefully it should not be a problem. You can try it directly from the start.
