Each level has a special coin in it. The special coin is in a chest located near the level exit, and is unlockable by finding all three keys in each level.
The levels are all really small, so just check up every ladder and in every trench, and you will have no trouble finding them. Turning on Easy Mode in the pause menu options means that if you die, you keep whatever keys you have found, so you can just sprint to the chest and end the level once you have found all three no matter what.
