(I did it with Bryan Danielson's Cattle Mutilation, but Sting, Chris Jericho, etc. would also work.)

If you're on normal or below & playing a 1-on-1, hitting a finisher seems like an almost automatic win (at least I haven't seen it lose yet), so if you get it locked in, you should have the achievement.

I've only played a couple matches so I don't yet fully understand how non-finisher submissions work, but a real easy way to do this is to just pick someone with a submission finisher (I did Bryan Danielson but Chris Jericho, Sting, etc. would also work).
You can check how to set up their finisher by pausing and using R1 to tab over to 'Move List.'
On Normal difficulty or below at least, hitting a finisher is practically a guarenteed win, so if you lock in the finishing submission, that should get you your trophy.

Start an Exhibition match with one of these wrestlers and check your wrestler's moves to see what position you and your opponent needs to be in to perform the submission finisher. If you're Bryan you should have an easy time as his only finisher on a standing opponent is a submission.
