Real easy, but in case you're new to the game...
You can find all of your character's signature and finisher moves by pausing and using R1 to tab over to 'Move List.'
Use any combination of moves to build up your momentum bar until it says 'Signature' above it. From there you can do any of the Signatures (note, you can do more than one signature while that's up, as long as you do it before the meter changes.)
To use finishers you need to get into that 'Signature' mode and use a taunt, at which point it will say 'Finisher.'
If you use one of each in a match and win (which you can usually do if you pin right after the finisher) you're done.
