with a wrestler who got the anti-air skill, you need to catch an opponnent who's jumping from the top rope, you need use the button 
in his direction to grab him when he's jumping. (I was using Wardlow).

Can you not unlock any achievments online? Just tried private match and nothing unlocked when the criteria was met.

First of all you need to play as someone with the Anti-Air Defense skill. One example is Chris Jericho but you can also add the skill to a created wrestler in Road to Elite mode. You perform this skill when an opponent is attempting a diving or springboard move on you while you're standing, press 
when they're midair to catch them. The main problem with this trophy is the AI don't dive on standing opponents all that much in my experience, though facing high fliers like Darby Allin or Jeff Hardy can up your chances. I'd suggest buying this skill early in your Road to Elite runs and you'll get it eventually, or you can use a second controller to make this super easy.

Very simple with two controllers. I used Wardlow against Pac but you can use any that have the necessary skills (I'm not sure where to check tbh). I made Pac do a springboard with the second controller using A+X/B+Y and then pressed A on my main controller with Wardlow to catch him. You should get an "Anti-Air" buff in the bottom left corner. Achievement will pop instantly.
