just go to 1v1 singles against cpu and play a normal match as soon as you start go outside grab weapons and beat the cpu until you get disqualified then hit rematch and rinse and repeat. You will still get credit for a completed match and also while doing this i played through the entire roster of characters and earned the achievement for using 50 aew wrestlers. its still very time consuming im at currently at 72% and thats playing 3hrs consecutive.

It's very strange how it takes around 4 hits for a DQ

I found it faster to do two controllers and get counted out or if you don't have two controller do the same but go outside the ring and get yourself counted out.

The fastest way is two controllers.
Have your second controller immediately get on the top rope and dive off, ensuring to miss the opponent. Grab the first controller and immediately pin when they hit the ground. With this method, you can finish a match in 10-15 seconds.

The DQ method is a fantastic method for those with just one controller, but this is even faster with 2.
Simply start a match with 2 controllers, hit a grapple attack and pin the opponent while they're down. This will end the match a lot faster than if you were to get disqualified and also avoids any additional interference from the AI doing tope attacks and/or breaking the count-outs.
Of course, you may get this through natural play if you enjoy the game and aren't looking to grind this out for the G.

This is simple but a grind. The trophy doesn't specifiy winning or against COM so you can speed things up by getting yourself disqualified by grabbing a weapon or just immediately pinning an idle second controller. It's suggested to use a new wrestler every time so you can work towards Equal Opportunity Player 
. Once you have that trophy you can make things a little quicker by choosing to rematch after winning.
