Once you go to re-enter the Animus to start sequence 2. Rebecca will explain how to access memories from the menu. From this point on you can now access past memories to replay them. Pick any memory from any sequence you've previously completed. Once then memory loads up the trophy will pop at the start so you don't have to finish the memory if you don't want to.
