Real easy and fast way to get this is to go into Versus, if you'll be comfortable controlling both controllers (it's not very difficult, as you pretty much just need one finger to do the blocking), or set up a player match with a buddy. The person who will be doing the instant blocks can pick whoever they want. The person doing the attacking needs to choose V-13. Also would be wise to set the match time to infinite.
Once the match starts, the person blocking needs to back up against a wall and have V-13 follow you to the wall. Simply hold forward the whole time with V-13 and press the B button to do an 8 hit attack. If the instant block is done right (block right before the attack hits), your character (the one blocking) will turn white and that will be 8 quick instant blocks from that one move. I got the achievement in less than 10 minutes this way. I uploaded a small clip to show what I mean. Sorry the vid sucks. Used my camera for it. Just wanted to show what I was talking about.

i agree, it is an excellent guide, took me a bit longer than 10 minutes but that's because i needed to get the timing right

I'm pretty sure it can be unlocked in Training Mode, all you have to do is block an attack at the moment it hits, causing the character to glow white. Just do this 300 times. Can easily be done against Jin's Ice Shard attack or any single hit attack. In Training, you can record a character to do any number of hits at a set pace, and then play it back and counter it at your own rhythm.

I had to do this in Versus. Training it wouldn't unlock for me.

This trophy is titled "Their Numbers Count For Nothing..." and it's for using an instant guard 300 times. This won't take very long at all, despite sounding like a high number. When the opponent attacks, you simply press back in a timely manner and your character should light up and you'll receive a boost to your distortion meter.
Naturally, this is best done with a second controller in local versus or with a friend online. Personally, I knocked this out while building meter while going for the various trophies that require you to build meter such as any trophy related to the Astral Heats or Distortion Drives. If you'd like to knock this out quickly, simply tap square on controller two and tap back on your primary controller immediately after. Once you get in a rhythm it's an easy thing to boost and thankfully doesn't take too long.

Instant Blocks are blocks RIGHT before your opponent hits you. How you know if you instant blocked is if your character glows white. Do this 300 times and you’ll get it. If you cant do it naturally then take 2 controllers, Player 1 (Any character) and Player 2 (Nu), Have Nu spam C/
while you time your blocks, you’ll get it in no time. Boosting this with a friend works too.
