For me, I found the easiest way to become the league MVP was to play as a quarter back, you will gain all the yards and TD's of the passing plays. Playing through all division matches with the majority of TD's being passing TD's and executing large passing plays will all help to get your "Franchise" up and past other league contenders.
An easy way for big yards is to run a "Hail Mary" and run the "999" play, upon throwing to a receiver carry out a clash catch (LT and Y). This will make you catch the ball ( As long as the defence don't do an annoying off the ball tackle on you) and should put you in the clear to run in the TD.

It's surprisingly easy to get MVP. Just make sure Franchise is the only player you use on offense and you always try to get sacks with him on defense and you should be MVP with no problem at all.
