Carrots do come back over time, but if you are looking at just grinding the kicking carrots before grinding the kicking cars then I would pause, select menu, then select play. The load times are short and the entire field of carrots respawns, meaning you can knock 100 out with little wait time in between.

Also like to add if you go to the red shoe shop and buy the gardener outfit the bunnies won’t attack you
