You beat the Macho Man Randy Savage aka El Machismo during the "Match Up" race in Autovia.

I did story mode and then selected to follow Mack and then went to a gold star in Autovia called Match Up

All you need to do is beat him in Autovia. You need to complete the first few Gold Events in that area before you can race him. It's not a hard race, just race normal as you would any other race, and be sure to get the sparkplugs.
