You will come upon this boss on normal progression, but it's likely an optional fight since there is a ladder right behind it. Killing it is worth is for the weapon you get when you bring the eye back to the blacksmith.
This fight has two phases. In the first half, the golem's attacks are pretty slow. He will swing at you twice with his big arm, or use his right arm as a jackhammer for an AoE type attack. I kept my distance, baited his attacks and ran in with light attacks after his arm swings were finished. Rinse and repeat until he is at half health.
At this point the golem will remove his right arm and use it as a weapon. Run in and tuck yourself under his left arm (your right side). From here you can easily dodge his sweeping attack because the weapon reaches passed you when he swings it. Attack quickly and dodge into him when he swings, or use your shield and the fight will be over quickly.
