Currently, the best method I found to fight and beat Red Widow with basically don't getting any damage is, after defeating their 2 "guard", focus on her and smash the following combination of buttons
(in direction to the Red Widow) + 
& immediately smash 
(like 3 times) to perform a stab and repeat until she is dead.
To prevent her from escaping or parrying you, try to get her against a wall all the time, otherwise you could lose your momentum and get in trouble.
