Good news is you cannot miss any quests in the game. Basically, play through the story and don't worry about the point where you must make a choice between 2 missions as you can simply replay the one you didn't do after completing the game. Then make sure to do all challenge quests and the achievement will unlock.
Some of the challenge quests are quite difficult (Gladiator 5 a prime example) but all are doable with the correct sub weapon upgrades and some good dodging skills.

I finished the game and didn't get the achievements. Which is the mission you have to choose in order to complete all the quests?

Gladiator 5 tips:First round,rapid X hits,chain seize,instakill.
Round 2,use the Headsmans axe,multiple eyeball kills.Should earn you 3 chain seizes,save the 3rd one for round 3.Round 3:Make certain to keep your companion alive,the flying wenches will focus on him.I used the 2nd heal core and cyclopean maul.Just focused on Cyclops,when he falls backward use RB on him.Rapid hit him with X for chain seize refill.Round 4:Rapid X hit,chain seize,insta kill.Round 5:hit skeleton Kings legs with cyclopean maul,when he falls refill soul bar at blue heart area.Should only take 2 to 3 mins for him.Cyclops takes the most time.I had 6+ minutes left at end.Use KUCLIK for partner,has great line bash skill on eyeballs and seems more hardier than the others.

Good work I'll have to try this, but this is a solution for all the quest? or just gladiator 5? Is this because Gladiator 5 is super tough and the rest are kind easy? Just wondering good stuff though.

There are actually two types of quests that need to be completed for this trophy, there are the main story quests & then the challenge quests. The challenge quests will unlock as you go through the game, there are also extra challenge quests that will unlock after you complete the main game.
NOTE: During one mission in the story there was a part where you had to choose what path to take, in here I told you to take the ‘Infiltration’ quest path. In order to get this trophy you will need to go to this certain chapter and choose the opposite quest, this can be found by going to the correct statue & seeing a quest that hasn’t been played yet. Just play that quest & you will get the trophy.
This can only be done once you have completed the game and have the option to replay the quests.
