The final boss does not count as an enemy for the trophy
Moving on, this trophy is highly missable. As you progress through the game certain key parts will change the enemy layout and enemies in certain rooms. You have to kill every enemy, this means the enemies that would be replaced too. From what I am aware the times the enemies change are after the following
-when you gain access to go through the front door of the house
-after you defeat the second boss
For this to work you will need to utilize the knife. I killed most of the enemies with the knife and had plenty of ammo to spare.
As a side note, the basement where you blow up a wall you will not need to return to through your playthrough—but new enemies will spawn in the room after you beat the second boss. Make sure you kill them because they are easily missable.
