Trophies in this game are glitched and may not unlock when you complete the task. You can try restarting the game and rebooting and older save, but you may have to run a new playthrough entirely.
The gardener is the first boss of the game, and very easy to beat. It takes 2 shotgun blasts to stun him or 4 pistol shots. When he is stunned you call the cargo over to hit the boss. When you hit him with the cargo three times he will fall to his death and the trophy--should unlock. If not refer to the disclosure above to try and fix the problem.
