While initially thinking that this meant at least a two-star rating for every challenge, you only need to get a two-star (or more) rating on one of each type of challenge.
The easiest way to do this is attempt this once you have finished the game and have some upgrades (especially the Dash ability) and go back to Turnipseed Farm for the challenges there.
