Using two controllers go to offline Split-screen game and choose customize, then character and choose Makenna.
Simply shoot with
or 
to curve the serve around the 2nd controller. You don't have to worry about touching the 2nd controller because it will automatically shoot. Keep playing until you win 2 sets/ the match.
Based on my experience with the Shutout Trophy I believe all but the "Unstoppable" trophy will unlock while playing offline in Split-screen (Version 1.02).

You can change your character under Customize > Character (under Character Customization). Choose Makenna and win a match either online, against a friend or in splitscreen.
