I got it without touching the 2nd controller during the splitscreen match. I just used the shield to pop the disc up:
Don't move. Once the other "player" gets the disc to serve, hold down
to activate your shield. When the disc hits you, it'll go straight up so you'll already be right under it. (Don't move.) Just hit
