How to unlock the Man at Arms achievement in Dungeons & Dragons: Daggerdale - Definitive Guide
You do not have to have all weapons in your inventory at once. Picking them up or buying them one time during your games is enough. Thanks to NuffinButSteele that confirnmed this is tracked between all your characters.
I kept track of all the unique weapon names I could find through one playthrough, and the achievement popped on a Heavy War Pick during the end. Here they are:
--- EDGED (Blades / Axes / Special) ---
Dagger
Short Sword
Elven Short Sword
Longsword
Bastard Sword
Tiefling Bastard Sword
Greatsword
Dragonborn Greatsword
Scimitar
--
Kopesh
Battleaxe
Dwarven Waraxe
Greataxe
--- BLUNT (Hammers / Clubs / Picks / Staffs / Special) ---
Mace
Morningstar
Dwarven Warhammer
Mordenkrad
Club
Heavy War Pick
--
Quarterstaff
Ornate Quarterstaff
Elven Quarterstaff
--- PROJECTILE (Thrown / Bows / Crossbows) ---
Throwing Dagger
Handaxe
Shuriken
Throwing Hammer
Dwarven Throwing Hammer
--
Crossbow
Hand Crossbow
Shortbow
Longbow
Elven Greatbow
--- SHIELDS ---
Even though considered weapons by the Fighter and located in the wepaons tab at merchants, these do not affect the achievement. Thanks to MrBojeezy for confirming this.
Now, although these have unique icons it could be that as far as the achievement goes, it won't differentiate between a Short Sword and an Elven Short Sword, but I did keep a lookout for variations on the most common weapons but didn't find any. If you do happen to find a Elven Dagger or Dwarven Greataxe or similar (not on this list), please post a comment to verify that the Elven/Dwarven/Dragonborn/Ornate versions of a weapon doesn't count.
- The Tenderizer and The Gravedigger are 'special' weapons found during a story event, but they are purple in color and do not count.
- Some say the Tiefling Bastard and Bastard Sword doesn't count, while others unlock the achievement on these weapons.
Any and all comments welcome.

I may have missed some in the list, so please feel free to add to it in the comments. As long as you pick up everything you come across, you should be able to get this without buying any weapons, but I was grinding to 10 after the end of the game when I got my first bastard sword.
I've came across a lot of weapons as a wizard, beaten the game and reached max level, but hasn't unlocked. I've been asking the same question in the other solution to see as well. But thought It sort of make sense, since it is called "Man at Arms" as the warrior is a male character and usually warriors can use any weapon, but just curious if it is class restricted.
This trophy can be a bit confusing. By weapon types, they don't mean the kind of weapon it is (Bow, 1-Handed Blade, etc.) It refers to the actual name of the weapon like "Scimitar" and "Elven Greatbow." You DO NOT need to have them all in your inventory at the same time; you just need to have picked them up at some point. I had this unlock as I was grinding treasure and experience for level 10 after completing the game. Weapon drops are randomized, but follow the formula "X Weapon Type of Y." Such as "Ethereal Longbow of Velocity" and "Unholy Elven Short Sword of Destruction +2." The modifiers add different effects, like "Blazing" adds fire damage and "of the Delicate" gives the weapon a chance to inflict Weaken. You don't need to worry about those modifiers, just the basic weapon type. If you're confused, you can press while highlighting the item in your inventory for "Convert to Gold" and it will list the weapon type with no modifiers. (I would recommend cancelling out of this menu afterwards because you can earn more gold by selling the weapon to a shop.) You can write down everything you've collected if it worries you, but you should get everything eventually. If you don't have it by the time you've collected 100,000 gold, you can buy weapons from the shops, as you will likely have no need for the money at this point. There is a list of all the weapon types here, thanks to user Ellusion no at TrueAchievements:
Man at Arms Achievement in Dungeons & Dragons: Daggerdale
This is mostly speculation at this point, but I believe what the game refer to is weapon types. If you look closely at your weapons tab in the inventory, all weapons have their own little blurry circular images. A weapon called [Effect] + [Name/Type] + [Effect or Modifier] share the same weapon icon with [Effect] + [Name/Type] so a Fiery Dagger +1 is the same as a Deadly Dagger.
