This achievement requires you use 100 healing items. "Use" in this case simply means walking over a healing item, which then uses it automatically. If you want 100% in this game, you'll have it very, very, early, and it will probably take no more than 5-10 hours to hit this, if that.
I'm not sure if items that heal your musou gauge count, I got this achievement from an item that heals health. Regardless, you'll get it so early on that it doesn't make a big difference either way.
