In order to unlock all possible items in the gallery you need to do the following...
-Beat each story mode
-Achieve a maximum bond with all characters
-Complete each characters skill tree
In order to play as each character you have to complete each of their legendary battles unless you have played as them in campaign. Regardless you will have to play these battles to finish the conquest mode so this shouldn't be too far out of your way if you are going for 100%.
Here's some information given by Greedy136 that is also helpful.
For all the movies you have to clear the four story modes but you also have to complete all Conquest Mode stages (without DLC) to unlock the final two movies (one of them already for finishing all Legendary Battles).
Furthermore, you have to buy all animals from the mercant and get all the weapons (without DLC). To get all weapons you need to answer all the scholar's questions correctly (each question at least once). Then score at least 4 out of 5 correct answers to get the remaining weapon. The other two secret weapons should have been unlocked if you beat Conquest Mode anyway. The weapons will cost a lot of money, so get discounted prices from the mercant whenever he is in town.

Thing is I've gotten the achievements for all the voices, all the weapons, all the scholar quizzes etc. It should have unlocked shouldnt it?
