I found this easiest to do on the Hellvine enemy, and can be done during the tutorial sequence.
During the tutorial you'll fight one of each of the basic enemy types. You can use the LB to block a melee attack just before contact. After defeating the ripper and the Spitter the game will put the block instructions up on the left side of the screen and a Hellvine will show up. It will tunnel underground leaving a visible path until it pops up to attack you. Just stand still and watch until the Hellvine gets up to you, hit LB as it pops up. You'll know you've done it correctly if the Hellvine sits there stunned.
If you got past the tutorial without getting this achievement Hellvines can often be found guarding nests.
