If you don't have a friend who wants to play this terrible game with you (and I can't blame them!) and you want to get these co-op achievements I do have a confirmed solution that worked for me.
Simply play through by yourself and any time you come to the end of a chapter or boss conclusion simply sign in a dummy profile on a second controller and jump into the game prior to the scene ending or boss dying. As long as both you and the second profile come up on the summary screen for each level you should get this achievement as this is how I did it.
You may notice as you're going through the game that your second profile will get the achievements for killing bosses but not the "close this chapter" achievements. No worries, this does not have any effect it seems. As always for these achievements, go get a beer while the credits are rolling and wait for your achievement to pop.
Level 1: After the camp with the first lumber guy with a gun there will be a bridge. Jump in prior to going on the bridge.
Level 2: Just jump in with the boss in the conclusion. The level does not need to be played.
Level 3: There will be a camp with a few carved wooden statues and the mirror on the wall blocking the right side. Jump in here before killing all the guys.
Level 4: Just jump in with the boss in the conclusion. The level does not need to be played.
Level 5: Just jump in with the boss in the conclusion. The level does not need to be played.
Level 6: After you make the jumps over the 3 spinning thingies there will be one more room with the mirror blocking the door. Jump in prior to leaving through that door.
Level 7: Just jump in with the boss in the conclusion. The level does not need to be played.
Level 8: After the race track ends you will come to an open field with a bunch of chainsaw guys. Jump in here before leaving the area.
Level 9: After the hedges mazes you will need to jump over some flippy spike traps. Once you get past these there will be one final fight near a fountain. Jump in here.
Level 10: Just jump in with the boss in the conclusion. The level does not need to be played.
Level 11: After killing the third flying dragon/beaver (2 on the cloud, then 1 up further) there will be a chest full of gems, jump in before climbing up past this chest.
Level 12: Just jump in with the boss in the conclusion. The level does not need to be played.
Level 13: After going through the furnace and jumping along the pipes. Jump in right before you enter the pipe at the end.
Level 14: Just jump in with the boss in the conclusion. The level does not need to be played.
Level 15: Just jump in with the boss in the conclusion. The level does not need to be played.
*Note: If actually playing over Xbox Live you will not need to watch the credits for the achievement to pop.

Tried this for coop easy, got the achievement. Gonna use it for medium and hard, then. Great solution. Saves me the trouble of finding someone willing to play this piece of shit game.

This can be done online or offline. You can complete it by yourself with two controllers offline if you don't have a partner. All you need to do is finish the level with two players, so you can play each level with a single player and then just add the second player at the very end.
