Go on Arena. Score a goal and press X. When you are on the replay, select to save it to Replay Theatre. This will take a few seconds.

You can do this in the Arena. When you score a goal or save a ball, the replay will show. Press Instant Replay and Upload video. Then select Save to Replay theatre and when finished, the achievement will come up

After you finish a match, there will be the option on the post game menu to look through the game's highlights. Pick any of them, and enter to view the highlight. This brings you into the Replay viewer. Press to save the highlight, but make sure to save it to one of the slots in the Replay Theatre.
