You learn about breaking enemies during the fight with Bloodhorn in Chapter 1.
I had the easiest time breaking Dualhorns and Magitek axmen. When fighting Dualhorns stand in front of them. When they rear up to attack you will get the option to Parry. Parry their attack and they will break.
For the Magitek axmen wait until they glow purple then warp strike into them.
You fight some of them in chapter 1, but you fight quite a few of them in chapter 2.
