Parry is the first ability you earn in the game. Once you earn it the dodge command becomes the parry command.
The first enemy that has a parriable attack are the Sabretusks. They will jump at you giving the parry prompt. The scorpions didn't seem to have an attack you could Parry. Once I unlocked the ability I would stand around in fights with Sabretusks and wait for them to attack me to Parry.
