Story related. Cannot be missed. (Mission: Jungle). How to beat him:

Simply keep hitting him with the gloves/sword and when he gets down switch to your Omega Power with and keep smashing him until he jumps to the platform. Repeat the process and when the button appears, select it and finish the button sequence. The trophy should pop in the cutscene.
