You should earn enough crystals just by playing the main storyline missions. Avoid spending crystals on the accessories from the shopkeeper. They are unnecessary if you are going for the building related achievements too.
If you need more crystals fast, the best way to get them is in the bonus missions that show up as the large red crystals that come out of the ground. The later red crystals are quite difficult, but the Lowleen Town crystals are very easy and fast. If you do these bonus missions then you will have more than enough crystals to rescue every survivor and buy every accessory.

Rescuing the Gingerians is a very simple task thankfully. All you need to do is go to the large crystal in the centre of the hub world and revive them using crystals that you will find everywhere throughout the levels. It costs 30 crystals per Gingerian and there are 15 in each area, meaning a total of 1350 crystals to revive everyone.
You will get that amount very easily.

Each of the three towns has 15 Gingerians you need to rescue. You rescue them by going to the big blue crystal in the town and pressing 
to bring up the menu to rescue townspeople, then you can spend 30 crystals to rescue a Gingerian. At 30 crystals per Gingerian and 15 Gingerians per town, you're looking at 450 crystals per town to rescue all the Gingerians in it.
Thankfully the blue crystals that you need to collect to save Gingerians are so prevalent that you'll have way more than you'll need to save all the Gingerians. By the time I finished all of the worlds in Lowleen Town, I had freed all the Gingerians there and had over 300 crystals towards the next town. By the time I finished Crater Peaks and freed all the Gingerians there, I already had over 500 crystals for the last town. So you'll likely end up collecting at least twice as many blue crystals than you actually need for these achievements. Therefore there's definitely no need to go out of your way to collect blue crystals anywhere. Don't risk your life to kill enemies or do some risky platforming just for blue crystals. They're in a massive abundance.
As for the crystals themselves, they are scattered around each world and you'll likely collect a ton without trying, as they typically line the path you're supposed to take. They are also all over the red crystal purification levels, so you'll definitely get a bunch there if you decide to play them for fun. Lastly, enemies also drop blue crystals when defeated, and you'll be defeating lots of enemies.
If you've got 450 crystals or more, when you go up to the big blue crystal in town you can save all 15 Gingerians right away. Lowleen Town is the only town where you'll actually be freeing Gingerians as you collect enough crystals, and then have to wait to collect more crystals as you beat each world, since you're just getting started. Then you'll find that you collect more crystals than you know what to do with.
Upon rescuing all 45 Gingerians across all three towns, you'll unlock all of these achievements.
