Valhalla progression is split between what is called Lower Realms and Upper Realms. You start at the lower realms and after you defeat a Valhalla's chosen enemy you'll go back to the first Realm sanctuary and be able to ascend to upper realms and progress the story further.
Midgard, Alfheim, Svartalfheim, Jotunheim, Vanaheim and Asgard are part of the Lower Realms and show up randomly, but as you likely visit 2-3 of them per run before you ascend you should run into all of them before you complete the story even if you don't die any runs.
The last 03 Upper realms are however not random and depend on the Weapon Path you select at the start of your game. So you will need to pick each of the weapons path at least once and get to the Upper Realms to unlock this. Below is the relation between each weapon and the Realm you visit:
Axe -> Niflehim
Blades -> Mulpelheim
Spear -> Helheim
