Simply complete all the Van Halen songs in all the career modes (guitar, vocals, drums and bass).

The guest artists songs don't have to be completed.

This can also be done on any difficulty.

There are 25 VH songs you'll have to play for each instrument, plus you will have to play a handful of guest artist songs to unlock the second tier of VH songs. After that, you should be able to exclusively play the VH songs and earn enough stars to progress. Also, the guitar career contains 3 additional songs/solos that must be completed. So you're looking at a grand total of 103 VH songs, plus approximately 3 guest artist songs per career, 12 total. So 115 total songs for this achievement.

Oh and you might also want to add that, since it can be done on any difficulty, the fan trick can be used if you don't want to do the Vocals career.

This will unlock as you finish each instrument's career mode. Again, you only have to pass the songs, not 5-star them.
