Go into your career, using whatever instrument and whatever difficulty. Once you get to the screen before the gigs, select "edit rocker." From here, select "instrument" at the bottom. Choose the guitar, and then workshop. If you don't care what the guitar looks like, just select "random," or you can customize it however you desire.
After you have completed your guitar's appearance, make sure you save it.

This should say "create and save a custom guitar". Under the edit rocker menu, select "instrument", then "guitar". You can just use the "random" option as long as you save whatever you end up with.
