To unlock Classic Dave, you have to get to the "Van Halen: The Early Years" final stage in the vocal career. Simply play one song and the achievement will unlock.
Or, if you completed a career (100% it), you have the option of playing EVERY Van Halen gig with the classic characters. If you have this option on and start a brand new career (excepted for the one you completed), it should unlock after you play Panama. You must play on vocals for it to work this way.

I finished the guitar career then started the vocal career. It said I unlocked Diamond Dave but all I can find is Eddie, my rocker, and the standard game rockers. Im about 33% done with the vocals so far and singing mostly only VH songs. Any clue where Dave went? Maybe to get some ice cream?

You do not have to unlock the classic character for this trophy. Once you've unlocked the last gig in vocal career (the early years), all VH characters will become the "classic" versions. Just play one of these songs on vocals.
