This is simply unlocked by playing Quest Mode. In the quest mode path, select Lars Umlaut (7th on the path) and you will have to complete a number of stars by playing the songs in the setlist (9 in total) to make him transform to Warrior Lars. It will show a progress bar to show how close you are to the transformation.
Upon transformation you will then be able to do an Encore song which is "Calling" by Strung Out.

The Encore song isn't Calling by Stung Out but Paranoid (Live) by Metallica & Ozzy Osbourne.

Story related and cannot be missed. All you have to do is earn the specified number of stars required to release Lars.
