Chapter 1 in Summer you will be gifted a horse at some point during the day. Apparently this only happens if you sold some dairy products through the ledger in Spring so do that first.
Once you have your horse you can name them. Then press
to jump on and the trophy will pop.

Unfortunately this is not the case. Starting in Summer, make Takakura leave to go sell/buy something from the city and he will return with the horse. That's all there is to it.

Takakura will gift you the horse starting Summer, Ch. 1 provided that you've the ledger to ship some dairy products before. So despite haggling with Van being the more lucrative option for most of your products, make sure you use the ledger at least once. I recommend selling B-Rank milk or eggs through the ledger as you can't haggle with Van for a higher price for those items.
Once you own your horse simply approach its side and press the 
button to hop on.
