When you are setting up a new game you van choose the amount of AI opponents you want and who. Just go through all the AI and check what they are. You can see this written below their name. (Basic, Advanced, Expert).
Choose an Expert persona, start the game and win.

You ca still set up everything the way you want (hamlet difficulty, 1 ai player, small/big map, game speed). So just make it easy for yourself.
