Some beasts have the anointed trait which makes anyone who attacks them heretics (signified by a dark halo around the beast) I think the easiest to find it's the "Bishop like creature" you'll encounter it early on some random events.
keep in mind that beasts like foxes and devils can never become heretics, heretics recieve more damage from anointed enemies

Attacking a table with a chalice on it also trigger the heretics effect

Unlike most achievements this doesn't seem to work in the training
I attacked my own bishop cat and got the heretic, but didn't unlock
