Speed Shuffle is found when playing “Just Sweat” mode, under the "Playlists" tab. Select Speed Shuffle and play through the song portions until the trophy pops, after 20 songs.
It is possible to set the Move Controller down and let the mode go, then quit once the trophy has been earned.
