I've discovered that career mode will give you credit for completing a song if you "Abort gig" from the pause menu. This won't help you with score or ratings achievements, but it'll help with this one. You can't do this in quickplay, because "abort gig" is not available as a menu option.
Go to any single- or multi-song gig in career mode. In the single song gig, you can see which songs you haven't done yet because the play count at the bottom of the details will be zero. Start the song at any difficulty and then as soon as the music starts, hit start and "abort gig." Select the same gig and repeat until they're all non-zero and the achievement will pop.
You'll save a lot of time if you do this with 5 song gigs because it'll give you credit for every song in the gig when you abort. The disadvantage is that in the song selection screen for multi-song gigs, you can't see the play counts. So if you are armed with a checklist or have a good memory, this is definitely the less painful way to go.

You will likely do this while running thru career mode. If not, just play medley's including any track that doesn't have a Play Count yet (you can score 0 points and it is still considered finished).
